This article is a great one, where Steve Lopez talks about how chessplayers choose their opening moves. Give it aread! he starts out talking about a technical questions about putting ECO into chessbase, but turns it into a larger question:

How do we decide what to play in the opening? I don't necessarily mean while we're at the board; what I really mean is "How do we decide on a repertoire and/or specific moves and variations therein?"

He comes up with 4 seperate methods... its a great read.
